Easy Meal Prep Proteins

(sous vide steak)

COOK: 2 hours (sous vide), 2-3 minutes for searing

This can be served as an entree and the leftovers make a great filling for make-ahead burritos or quesadillas.

Ingredients.

  • 4 pieces of strip steak (8-12 oz each)

  • 1 tbsp butter (unsalted)

  • salt and pepper

Instructions.

Sous vide the steak:

  1. Set the Anova Sous Vide Precision Cooker to 130 degrees F.

  2. In a large ziploc bag, place the steaks side by side (you may need to use 2 separate bags). Seal the bag using the water immersion technique.

  3. Place the bag in the water bath and use clips to hold in place, if needed (the steak should be fully immersed in water). Set the timer for 2 hours (this will yield a medium-rare stake).

Finish the steak:

  1. Remove the bag from the water bath. Remove the steak from the bag and pat dry with paper towels.

  2. Season both sides of the steak with salt and pepper.

  3. In a cast iron pan, heat the butter on high heat. Add the steak and sear until well-browned, about 30-60 seconds on both sides.

  4. Remove steak from pan and let it rest for 10 minutes before serving. Slice and serve with chimichurri sauce.
