Ingredients.
4 pork chops (20 oz bone in)
1 tbsp butter (unsalted)
salt and pepper
Instructions.
Sous vide the pork chops:
Set the Anova Sous Vide Precision Cooker to 140 degrees F.
In a large ziploc bag, place the pork chops side by side (you may need to use 2 separate bags). Seal the bag using the water immersion technique.
Place the bag in the water bath and use clips to hold the bag in place (the pork chops should be fully immersed in water). Set the timer for 45 minutes.
Finish the pork chop:
Remove the bag from the water bath. Remove the pork chop from the bag and pat dry with paper towels.
Season both sides of the pork chops with salt and pepper.
In a cast iron pan, heat the butter on high heat. Add the pork chop and sear until well-browned, about 30-60 seconds on both sides.
Remove pork chop from pan and let it rest for 10 minutes before serving. Slice and serve with chimichurri sauce.
