Penne Vodka with Spinach

Note: This is not a low-calorie entree if you are using heavy cream and bacon, but it sure is tasty! This entree is also safe for kids because most of the alcohol cooks down during the process.

Ingredients.

  • 1 lb penne pasta

  • 2 oz prosciutto, chopped (or bacon)

  • 1 cup spinach, roughly chopped

  • 1 medium yellow onion, diced

  • 4 cloves garlic, minced

  • 1 can crushed tomatoes (28 oz)

  • 1 can tomato paste (6 oz)

  • 1/2 cup vodka

  • 2/3 cup heavy cream (or whole milk)

  • 1/2 cup parmesan cheese, grated

  • 1/2 cup fresh basil lives, roughly chopped

  • 1 tsp red pepper flakes

  • salt and pepper

Instructions.

  1. In a large pot, bring lightly salted water to a boil. Add penne and cook according to the instructions on the box.

  2. In a large pan on medium heat, add olive oil and saute prosciutto, garlic, and onion until translucent, about 5 minutes. Add salt, black pepper, and red pepper flakes and cook until fragrant, about 1 minute. Add vodka and let the sauce bubble until half of the alcohol has evaporated. Stir in the tomato paste until the mixture is smooth.

  3. Add the crushed tomatoes and cook for 15 minutes, stirring occasionally.

  4. Stir in the cream, cheese, and spinach and reduce heat to medium-low. Cook sauce until you’ve reached the desired thickness.

  5. Garnish with basil and serve.

Meal prep notes.

This recipe is meal prep and freezer friendly. Freeze for up to 3 months.

To reheat, microwave for 2-3 minutes on medium power.
