This can be served as an entree and the leftovers make a great filling for make-ahead burritos or quesadillas.

Ingredients.

  • 5 chicken thighs (bone-in, with skin)

  • 1 tsp paprika

  • 1 tsp garlic power

  • 1 tsp onion powder

  • salt and pepper

Instructions.

  1. Pat the chicken thighs dry.

  2. In a small bowl, mix together all seasonings. Sprinkle on both sides of the chicken.

  3. Place chicken in the air fryer, skin side down, and cook at 380 degrees F for 12 minutes then flip to the other side and cook for another 10 minutes, or until the skin is crispy.

  4. The thighs are done when an internal meat thermometer reads 165 degrees F.

Meal-prep notes.

Cooked chicken can be frozen for up to 3 months. To reheat, use an air fryer and cook at 380 degrees F for 4-5 minutes.
