Make ahead egg bake

Ingredients.
Ingredients
2 lbs pork sausage
12 eggs
1 cup sour cream (light)
1/4 cup whole milk
4 green onions, chopped
1/2 green bell pepper, diced
1/2 red bell pepper, diced
1 cup cremini mushrooms, chopped
1 cup spinach, chopped
2 cups shredded cheddar cheese
salt and pepper
Instructions.
Preheat over to 350 degrees F. Spray a 9x13” baking dish with cooking spray.
Combine eggs, sour cream, milk, cheese, and salt and pepper in a large bowl. Mix on low speed with an electric mixer, until combined.
Heat a large skill over medium heat. Add the sausage and cook until browned, breaking it into small pieces with a wooden spoon. Drain most of the grease and add the sausage to the bowl with the egg mixture.
Add all the vegetables (except spinach) to the skillet and saute for 2-3 minutes. Add to the bowl with the eggs and stir to combine.
Pour the mixture into the baking dish and bake for 35-50 minutes or until the edges are set and the center is just barely jiggly.
Meal-prep notes.
This recipe can be made the night before. Refrigerate the egg bake in the baking dish and serve the next day. Leftovers can be refrigerated for 3-4 days and reheats well in the microwave.

Bell peppers are rich in vitamin C. It’s also packed with vitamins A, B6, E, folate, fiber, and antioxidants.
Mushrooms contain protein, fiber, B vitamins, and minerals.
Spinach is high in vitamin C and iron.
