Ingredients.

Ingredients

  • 6 cups oats (I like Bob Red Mills old-fashioned rolled oats)

  • 1/3 cup ground flax seeds

  • 1/3 cup chia seeds

  • 1 tsp cinnamon

  • Optional supplements: Vital proteins collagen peptides (supports healthy hair, nails, skins, bones, and joints) and Nutiva PCT powder (good fats that fuel the brain and body for sustained energy)

Overnight prep (for 1 serving)

  • 1/2 cup oatmeal mixture + 1/2 cup almond milk + mix-ins (see below)

Mix-ins (for 1 serving)

  • Apple raisin: 1/2 apple (chopped) + 1/4 cup raisins

  • Berries: 1/2 cup frozen berries + 1/2 cup almond (chopped or sliced)

Instructions.

  1. In a large mixing bowl, mix together all dry ingredients (oats, seeds, and cinnamon). Store in an airtight container.

  2. PREP (for 1 serving): In a small container (I like to use a 16 oz wide mouth mason jar), add the oatmeal mixture and almond milk. Stir the mixture and let sit overnight for a fluffier oatmeal.

  3. FOR SERVING: In a small saute pan, heat the oatmeal/almond milk mixture and the desired mix-in on medium heat for 3-5 minutes, or until oats are fully absorbed into the milk. Stir occasionally. Remove from heat and let cool for 2-3 minutes before serving.

Notes.

This recipe is meal prep-friendly. You can prepare a large batch of the dry oatmeal mixture ahead of time and prepare the oatmeal+almond milk mixture in the refrigerator the night before serving.

Nutrition facts.

Berries are packed with antioxidants and vitamin C. It also contains fiber, folate, and omega 3 fatty acids. (Bonus: frozen berries are said to retain more nutrients than fresh berries as they are often processed at peak ripeness).

Chia seeds and flax seeds are both excellent sources of omega-3 fatty acids and fiber.

Oats are packed with fiber as well as other nutrients including zinc, folate, choline, iron, magnesium, and selenium.

For moms: Omega-3 fatty acids are an essential nutrient for both pregnancy and postpartum, supporting fetal development (brain, vision) and are a major component of breast milk. For moms, it has an anti-inflammatory property (with brain, skin, and immune system benefits), enhances mental focus, and can reduce the risk of postpartum depression.
