Banana Bread with Orange Zest

Ingredients.

  • 1/3 cup melted coconut oil (or olive oil)

  • 1/2 cup honey

  • 2 eggs

  • 3 ripe bananas, mashed

  • 1/4 cup almond milk (or milk of choice)

  • 1 ¾ cups of whole wheat flour

  • 1 tsp baking soda

  • 1/2 tsp ground cinnamon

  • 1/2 tsp salt

  • 1 tsp vanilla extract

  • zest from 1 orange, grated

  • Optional mix-ins: 1 cup of raisins, chopped walnuts, dark chocolate chips

Instructions.

  1. Preheat oven to 325 degrees F. Lightly grease or line a 9x5 loaf pan (or line with parchment paper).

  2. In a large bowl mix together wet ingredients (oil, eggs, bananas, honey, almond milk). Add baking soda, cinnamon, salt, and vanilla extract. Mix well.

  3. Stir in the flour (some lumps in the batter are OK) and any optional mix-ins.

  4. Pour the batter into the greased loaf pan. Sprinkle lightly with cinnamon and sugar if desired.

  5. Bake for 35-40 minutes, or until a toothpick inserted comes out clean. Transfer to a wire wrack to cool before serving.

Meal-prep notes.

This bread freezes well. Seal in a large ziploc bag in the freezer for up to 3 months.

Bananas are packed with antioxidants. folate, vitamin B6, vitamin C, and potassium which support the nervous system, skin health, iron absorption, and blood pressure.

Oranges are rich in vitamin C.
