Air Fryer Grilled Cheese with Veggies

Ingredients.

  • 2 cheese slices (mozzarella, provolone, pepperjack, muenster, or american)

  • 2 slices of bread (I like Ezekiel bread)

  • 1 tbsp butter

  • Fresh spinach, shredded

  • 2 tomato slices

Instructions.

  1. Spread butter on the outer side of each piece of bread.

  2. In the air fryer, lay the piece of bread (butter side down), in the air fryer basket. Top with 1 cheese slice, tomato slice, spinach, then the final piece of cheese and bread.

  3. Cook the sandwich at 370 degrees F for 4 minutes. Flip the sandwich over and cook for another 4 minutes.

  4. Serve with a side of tator tots or sweet potato fries.

Note: For extra flavor, you can spread a layer of pesto sauce on the bread.

Cheese: Cheese is a great source of calcium. Lower-calorie cheeses that are appropriate for infants and toddlers are mozzarella, provolone, pepperjack, muenster, and american.

Whole grain bread: Bread made from whole wheat, multi-grains, or sprouted grains are a good source of fiber and protein. Ezekiel bread is flourless bread made from sprouted grains.

Spinach is a great source of fiber, vitamins A/C/K, folic acid (vital for pregnant women), and calcium.
