Ingredients.
1 lb fettucine
4 chicken breasts, cubed
3 garlic cloves, minced
1/2 yellow onion, diced
14 oz chicken broth
1 cup heavy cream
1 1/2 cup parmesan cheese, grated
12 oz bag of frozen broccoli florets
olive oil
salt and pepper
red pepper flakes (optional)
Instructions.
In a large pot, heat the oil and brown the chicken.
Add garlic and onion and saute for about 1 minute. Season with salt and pepper and red pepper flakes (optional).
Add broth, cream, and pasta, and bring to a boil. Cover and reduce heat to a simmer for 15-20 minutes, or until fettucine is al dente.
Add broccoli during the last 10 minutes of the cooking process (I prefer steaming broccoli separately then adding it add the end as it helps retain nutrients).
Turn off heat and stir in cheese.
