One-Pot Chicken and Broccoli Alfredo

COOK: 30 minutes

Note: This is not a low-calorie entree if you are using heavy cream, but it sure is tasty!

Ingredients.

  • 1 lb fettucine

  • 4 chicken breasts, cubed

  • 3 garlic cloves, minced

  • 1/2 yellow onion, diced

  • 14 oz chicken broth

  • 1 cup heavy cream

  • 1 1/2 cup parmesan cheese, grated

  • 12 oz bag of frozen broccoli florets

  • olive oil

  • salt and pepper

  • red pepper flakes (optional)

Instructions.

  1. In a large pot, heat the oil and brown the chicken.

  2. Add garlic and onion and saute for about 1 minute. Season with salt and pepper and red pepper flakes (optional).

  3. Add broth, cream, and pasta, and bring to a boil. Cover and reduce heat to a simmer for 15-20 minutes, or until fettucine is al dente.

  4. Add broccoli during the last 10 minutes of the cooking process (I prefer steaming broccoli separately then adding it add the end as it helps retain nutrients).

  5. Turn off heat and stir in cheese.

Meal prep notes.

This recipe is meal prep and freezer friendly. Freeze for up to 3 months.

To reheat, microwave for 2-3 minutes on medium power.

Cheese is a great source of calcium.

Broccoli is an excellent source of vitamin A (eye health), vitamin B6 and folate (growth and brain development), and fiber (gut health).

Chicken is a great source of protein and contains many nutrients babies need to thrive, including vitamins B6 and B12, iron, zinc, choline, selenium, and vitamin B3.
