Black bean fritters with cilantro
Ingredients.
1/2 onion, diced
1 garlic clove, minced
1/4 tsp chili powder
1/4 tsp paprika
1/8 tsp cumin
1 can black beans (15 oz), drained and rinsed
2 eggs
Cilantro (1 handful of fresh cilantro)
1/3 cup apple sauce
1/3 cup all purpose flour
1/2 tsp baking powder
1 tbsp oil (for cooking)
Avocado oil spray (for cooking)
Instructions.
In a large sautee pan, add 1 tbsp oil then add onions and garlic until translucent. Add spices (chili powder, paprika, cumin) to the pan and toast until fragrant.
In a blender or food processor, add the sauteed mix, eggs eggs, cilantro, dry ingredients (flour, baking powder), beans, and apple sauce. Blend until evenly combined.
Heat griddle to medium heat and spray with avocado oil. Scoop the bean mixture into the desired size on the griddle. Flip the fritter after 1-2 minute or once you see small bubbles form through the batter.
Flip and cook on the other side for another 1-2 minutes, or until the middle is set.
Serve with a dipping sauce like salsa, sour cream, or ketchup.
Meal-prep notes.
This recipe is freezer friendly. Store the fritters in a large ziploc bag for up to 3 months.
To reheat, microwave for 1 minute on medium power.
